Benefits
- The ginger is the heat. Honey softens it after the simmer.
- A short simmer pulls flavor out without a long steep.
- Lemon at the end keeps the cup bright instead of flat.
Ingredients
Original recipe (1X) yields 1 serving
Directions
- Put the water and ginger in a small saucepan.
- Bring it to a simmer and keep it there for 6 minutes. The water should take on the ginger smell.
- Strain it into a mug. Stir in the honey away from the burner so it does not cook.
- Add the lemon juice last and drink it while it is still hot.
Tips
- Slice the ginger thin so six minutes is enough.
- Strain before the honey. Honey in the pan cooks and tastes dull.

Six minutes was the right simmer. Longer and the ginger turned harsh.
