Benefits
- A fast side that stays bright green.
- Garlic cooked in the same pan, so there is no second pot.
- Chili is a pinch, not a sauce, so the beans still taste like beans.
Ingredients
Original recipe (1X) yields 4 servings
Directions
- Put the beans in a wide skillet with 1/4 cup water and the salt. Cover and cook over medium heat for 4 minutes.
- Uncover. If water is left, let it cook off.
- Push the beans to the side. Add the oil and garlic and cook until the slices are pale gold, about 1 minute.
- Toss everything together with the chili flakes and take the pan off the heat.
Tips
- Cover them only for the first few minutes. After that, uncovered keeps them from going olive.
- Pull the garlic as soon as the slices turn gold.

The garlic went from gold to bitter fast. I pull the pan as soon as I see color.
